I love a cozy fall meal, but sometimes the table needs something light and fresh to balance all those rich, comforting dishes.

That’s exactly what I had in mind with this shaved Brussels sprouts salad. Instead of the usual bacon and cranberries, I wanted something bright, savory, and full of texture.

Inspired by the flavors of a classic Caesar salad, this version combines crisp Brussels sprouts with tangy lemon-shallot vinaigrette, nutty Parmigiano Reggiano, and golden garlic breadcrumbs.

It’s a different take on seasonal salads, like my fall panzanella salad, with a delicious combination of buttery crunch, fresh lemon, and salty Parmesan in every bite.

Why This Recipe Works

  • Caesar-inspired flavor. Lemon vinaigrette, nutty Parmesan, and buttery garlic breadcrumbs give this salad a familiar savory appeal with a lighter finish.
  • Crunch in every bite. Finely shaved Brussels sprouts stay crisp, while golden toasted breadcrumbs add another layer of garlicky crunch.
  • Perfect for fall and holiday gatherings. A lighter, refreshing side that pairs beautifully with roasted meats, creamy potatoes, and other comforting seasonal dishes.
  • Easy to make ahead. The dressed Brussels sprouts hold their crunch overnight. Just keep the breadcrumbs separate and add them before serving for the best texture.

Key Ingredients

  • Fresh Brussels sprouts: Choose firm, tightly packed sprouts with bright green leaves. Shaving them very thinly creates delicate threads that are easy to eat but still have a satisfying crunch.
  • Lemon-Shallot Vinaigrette: My homemade dressing brings fresh lemon, a little Dijon, and finely minced shallots to the mix. It’s light and tangy, balancing the richness of the Parmesan and buttery breadcrumbs.
  • Parmigiano Reggiano: For the best flavor and presentation, I recommend authentic Parmigiano Reggiano, thinly shaved into ribbons with a vegetable peeler. Its rich, nutty, slightly salty flavor pairs beautifully with the lemon dressing and garlic breadcrumbs. Good-quality Parmesan makes a delicious substitute.
  • Panko breadcrumbs: These light, airy breadcrumbs toast up beautifully in a little butter and olive oil, creating a golden, crispy topping. Plain panko works best so you can control the seasoning.
  • Butter and fresh garlic: A little butter adds richness to the breadcrumbs, while freshly minced garlic brings a savory finish. Adding the garlic near the end of toasting keeps it from burning.

How to Make Shaved Brussels Sprouts Salad

1

Toast the Garlic Breadcrumbs

Cook the panko in butter and olive oil until golden, adding the minced garlic during the last minute. Set aside to cool.

2

Shave the Brussels Sprouts

Trim the ends and thinly shave the sprouts using a food processor. Alternatively, you can use a mandoline or sharp knife.

3

Toss the Salad

Combine the shaved Brussels sprouts with lemon-shallot vinaigrette and two-thirds of the Parmesan. Season to taste.

4

Assemble and Serve

Fold in half the garlic breadcrumbs, transfer to a serving dish, and finish with the remaining Parmesan and breadcrumbs. Garnish with lemon slices, if desired.

The Little Details

  • Shave the sprouts extra thin. A food processor with a thin slicing disc makes quick work of the prep. I use the 1 mm setting on mine for fine, delicate shavings that still have plenty of crunch.
  • Get those beautiful Parmesan ribbons. Use a vegetable peeler to shave the cheese into thin, delicate curls rather than grating it. Reserve some for scattering over the finished salad for a lovely restaurant-style presentation.
  • Watch the garlic closely. Toast the panko until golden before adding the minced garlic during the final 30–60 seconds. This gives the breadcrumbs a lovely buttery, garlicky flavor without risking burnt garlic.
  • Save the breadcrumbs for last. Toss them into the salad just before serving so they keep their crisp texture. A little extra vinaigrette on the side lets everyone adjust the dressing to their liking.
  • Make the presentation count. Serve the salad in a wide, shallow bowl or on a platter, loosely mounded rather than packed down. Finish with a generous scattering of shaved Parmesan and golden breadcrumbs, letting some of the bright green sprouts peek through. A few thin lemon slices add a pretty, simple finishing touch.

Make Ahead & Storage

One of my favorite things about this salad is how well it holds up when made ahead. Unlike delicate leafy greens, shaved Brussels sprouts stay crisp even after soaking up the lemony dressing.

  • Make ahead: Shave the Brussels sprouts and toss with the lemon-shallot vinaigrette up to a day in advance. Cover and refrigerate until ready to serve.
  • Keep the toppings separate: Store the shaved Parmesan and cooled garlic breadcrumbs in separate airtight containers. Add them just before serving so the breadcrumbs stay crunchy.
  • Before serving: Give the salad a good toss and taste for seasoning. Add another splash of vinaigrette if the sprouts have absorbed some of the dressing.
  • Storing leftovers: Refrigerate leftovers in an airtight container for up to 2 days. The sprouts will retain some crunch, but any mixed-in breadcrumbs will soften over time.

What to Serve with Brussels Sprouts Salad

With its bright lemon dressing and savory Parmesan, this shaved Brussels sprouts salad is a lovely counterpoint to rich, comforting fall and winter dishes. It’s especially good alongside roasted meats, creamy potatoes, and holiday favorites.

FAQs

Yes! Raw Brussels sprouts have a fresh, slightly peppery flavor and a satisfying crunch. Shaving them very thinly makes them easier to eat and helps the lemon-shallot vinaigrette coat every little ribbon.

I prefer using a food processor with a thin slicing disc, which makes quick work of a whole pound of sprouts. A mandoline or sharp knife works well, too. The key is to slice them as thinly as possible for a light, delicate texture.

Yes, but check how thickly they’re cut. Packaged shredded sprouts are often coarser than freshly shaved ones, so the salad may have a heartier texture. For the delicate ribbons in this recipe, I prefer shaving them myself.

Yes, although the texture will be different. Panko creates a light, airy crunch, while coarse fresh sourdough breadcrumbs offer a more rustic, crouton-like finish. Either works beautifully with the butter and garlic.

Equipment

Ingredients

Brussels Sprouts Salad

Buttery Garlic Breadcrumbs

  • ½ cup plain panko breadcrumbs
  • 1 tablespoon unsalted butter
  • 2 teaspoons extra-virgin olive oil
  • 1 medium garlic clove, finely minced
  • pinch of kosher salt

Instructions

  • Make the Garlic Breadcrumbs. Melt the butter with the olive oil in a medium skillet over medium-low heat. Add the panko breadcrumbs and a pinch of salt. Cook, stirring frequently, for 3–5 minutes, until golden and crisp. Add the minced garlic during the final 30–60 seconds, stirring constantly until fragrant. Immediately transfer to a plate to cool.
  • Shave the Brussels Sprouts. Trim the stem ends and remove any damaged outer leaves. Using a food processor fitted with a thin slicing disc, shave the sprouts into fine ribbons.
  • Alternatively, use a mandoline or sharp knife. Transfer to a large mixing bowl and separate any tightly packed pieces.
  • Dress the Brussels Sprouts. Pour ½ cup lemon-shallot vinaigrette over the shaved sprouts and toss thoroughly to coat. Add about two-thirds of the shaved Parmesan and freshly ground black pepper. Toss again, then taste and adjust with additional vinaigrette or salt as needed.
  • If making ahead, cover and refrigerate the dressed sprouts, reserving the Parmesan and breadcrumbs until serving.
  • Assemble and Serve. Just before serving, fold half of the cooled garlic breadcrumbs into the dressed Brussels sprouts. Transfer to a shallow serving bowl or platter, loosely mounding the salad. Scatter the remaining Parmesan and breadcrumbs over the top. Garnish with thin lemon slices, if desired, and serve with extra vinaigrette on the side.

Recipe Notes

  • Lemon-Shallot Vinaigrette: The salad prep time assumes the vinaigrette is already made. Prepare one batch of my Lemon-Shallot Vinaigrette recipe, which makes approximately ¾ cup. You’ll need at least ½ cup for the salad, with extra available for serving or adjusting to taste.
  • Shaving the Brussels sprouts: For the best texture, slice the sprouts as thinly as possible. A food processor with an adjustable slicing disc set to approximately 1 mm works beautifully. The sprouts should be finely shredded but still retain their characteristic crunch.
  • Make ahead: Shaved Brussels sprouts hold up exceptionally well after dressing. You can toss them with the vinaigrette and refrigerate in an airtight container overnight. Store the Parmesan and breadcrumbs separately, then add them just before serving. Toss the sprouts again and add a little extra vinaigrette if needed.
  • Breadcrumb substitution: For a more rustic variation, substitute coarse fresh sourdough breadcrumbs for the panko. Toast them in the butter and olive oil until golden and crisp, adding the garlic toward the end.
