For the Carrots

  • 2 lbs. medium carrots peeled and halved/quartered lengthwise
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • teaspoon ground cloves

For the Hot Honey Sauce

  • 2 tablespoons unsalted butter
  • 2 tablespoons hot honey (like Mike's Hot Honey)
  • 1 tablespoon brown sugar
  • ¼ teaspoon apple cider vinegar

Instructions
 

  • Preheat your oven to 400°F (200°C). Toss the carrots with olive oil, salt, pepper, ginger, cinnamon, and cloves on a baking sheet. Spread them out in a single layer.

  • For this recipe I like to use rainbow carrots for their aesthetic appeal but most any type of carrot, even baby carrots, will get the job done.
  • You can find Mike’s Hot Honey sauce in many grocery stores and online via Amazon.com.
  • Line your sheet pan with parchment paper or a silicone mat for easy clean up.
  • Cut the carrots uniformly to ensure they roast evenly.
  • Roast those carrots to perfection by giving them space on the pan — overcrowding is a no-no. Use an extra baking sheet if needed.
